Heat up times are altogether faster, allowing ESSE
cookers to be turned up
in the winter and down or even off* in summer, bringing both comfort
and
economy. And heat inputs can be balanced to cooking needs with the
result
that high performance can be maintained whatever the demands made
on the
unit.
The
history of ESSE cookers dates back long before the invention
of the heat efficient models that are so popular today. Up
to the late 1800s the traditional 'open range' dominated most
kitchens and ESSE supplied a considerable number and variety
of these.
However,
the burning rate of a coal fire can only be accurately controlled
by precisely regulating the air supply; further, the burning
cycle of an open fire does not lend itself to the constant heat
output desired for easy cooking without constant attention.
Aware of these limitations with open ranges, ESSE worked towards
creating closed appliances. And so, at the turn of the century,
the first heat storage cookers began to appear based on a simple
principle that still holds good a hundred years on.
